The hubster did the grocery shopping and then surprised me when he got home with everything on the list AND two bags of my FAVORITE pretzels (Grippo's...mmm) and announced "Forget what you were going to make, I'm making you dinner!" Like music to my ears... It turned out very nicely...and it gave us a chance to drink wine I got from Becky as a pre-wedding present that had a damask design!
Then came the craziness...a Peanut Butter Delight Cake...all for the birthday boy! One kiss for the cook...
One lick in anticipation...
After he realized it was tasty we didn't have enough time to grab it from him before it was all gone. I figured we'd give him a slice or two over a few days, but Sampson had different plans.
Family Portrait Attempt #1
Not much better the second time...
I saved a teeny tiny piece of cake for Nate to try. He said it tasted alright.
The cake that I made for US to enjoy. Mmm...it was Weight Watchers and SO good!
Now we're just watching a little Shark Week! It's been a fun day!
Here's the cake recipe for anyone with pets in need of a special treat!
Peanut Butter Delight Cake
1 cup white or whole wheat flour
1 tsp baking soda
1/4 cup peanut butter
1/4 cup vegetable oil
1 cup shredded carrots
1 tsp vanilla
1/3 cup honey
1 egg
Directions:
Preheat oven to 350°F. Mix together flour and baking soda. Add remaining ingredients and mix well. Pour into a ring mold sprayed with a nonstick spray for 40 minutes.
Frost this cake with low fat cottage cheese and decorate with carrot pieces. Store in refrigerator. (I used vanilla yogurt that we had on hand. I also melted a bit of peanut butter and after it cooled a bit I mixed it with yogurt and then piped it on top!)
I got this recipe from dog-treat-recipe-exchange.com
