WWW

I have to admit, I was scared to step on the scale Monday morning. But to my surprise I hadn't gained the ten pounds I'd imagined. In fact, I maintained my pre-wedding weight, which is a SHOCK considering how NOT active we were all last week! My goal this week? To get back into the swing of things with my cooking and portion control. But my goal for this summer and for the "limbo life" we're leading right now is to try my best to maintain my weightloss and not be too hard on myself if I eat a Twizzler or two during our chaotic and depressing job search.

On the bright side...check out this new recipe that my mom's friend Paulette shared with me. It is wonderful for three reasons:

1. It's cheap.
2. It's easy.
3. It's freaking DELICIOUS!

Mexican Pizza's by Paulette

1 tortilla (flour or wheat) - 2 Points...same for flour or wheat
1/2 cup Fat Free Refried Beans - 1 Point (we used refried BLACK beans!)
1/4 cup salsa - 0 Points
3 Tablespoons of low-fat Monterey Jack/Cheddar Cheese - 2 Points

Spread tortilla with refried beans, top with salsa and cheese. Bake at 400 degrees until cheese is melted and edges of tortilla are crisp. For just 5 points it is quite filling! We added more points to ours because of the sour cream we had with it.

See how happy I was? It was so quick and easy - and clean up was a breeze!

And it tasted mighty good too! Excuse me while I finish my dinner...

Make it this week peeps and let me know what you think! Thanks again to Paulette for sharing this delicious recipe!
