Avoid Wasting...

I made this zucchini bread recipe today, except I made muffins instead of bread. With pecans and dried cranberries. I had a small yellow squash and a mongo sized zucchini so (with shredding help from the hubster) I was able to whip up 18 muffins and 24 mini bites.

Reasons you should make them:

1. They are easy peasy.

2. They are fairly nutritious.

3. You won't waste those zucc's you planned to make for a veggie side dish with dinner and just never got around to it...OR, if you're NOT a slacker like me...then do it because they just taste so darn delicious delicious!!!

Thanks to Smitten Kitchen for another tasty recipe...have you tried this (for those extra maters you have on hand?), this (mmm...goat cheese and garden veggies!!!) or this (so summery and delicious!) yet? Well, you should because they're all delicious and fabulous for those summer finds from your garden/farmers market!!!!

Oh...I also made these yesterday. Ready for the recipe? Combine one box of Spice Cake mix with one can of pumpkin puree. Pour into muffin cups. Bake for 25 minutes at 350 degrees. How simple is that? I added 1/2 cup of chocolate chips, for good measure and to get them out of the kitchen so I'd stop eating at them sloooooowly but surely.

I can hear you thinking...why in the world do you need so many darn muffins? Well my friends, I freeze them and then we enjoy them for weeks to come.

So bake once, waste less, enjoy often!
