WWW Tip:
To offset the lure of checkout-aisle candy, plan ahead. Look for specific low-calorie goodies you can munch on as you grocery shop. One idea: Hit your supermarket's self-serve salad bar (grab a container of carrots, celery sticks or chunks of cut fruit). Pay for the snacks; then nibble as you shop!
***I like to plan my shopping trips ahead of time by breaking down everything that I need from the weekly recipes and categorizing them by location (i.e. produce, dairy, frozen, etc.) that way I spend less time in the store, rarely have to go back and forth, and usually don't add anything to the cart that we don't need!
WWW Recipe:
Unfried Chicken
Serves: 4
1/2 cup all-purpose flour
2 large egg whites
1 1/2 cup cornflake crumbs
4 chicken drumsticks, skinned (about 1 lb)
4 chicken thighs, skinned (about 1 lb)
1/2 tsp salt
1/2 tsp black pepper
1/4 cup fat-free buttermilk
1. Preheat the oven to 375 degrees. Line a large shallow baking pan with foil. Place a wire rack in the pan; spray the rack with nonstick spray.
2. Put the flour on a plate. Lightly beat the egg whites in a shallow dish. Put the crumbs on a plate. Mix the chicken, salt and pepper in a bowl; stir in the buttermilk. Dip the chicken, one piece at a time, into the flour, then into the eggs, then into the crumbs.
3. Put the chicken on the rack and lightly spray with nonstick spray. Bake until golden brown and cooked through, about 45 minutes (do not turn).
